Boozy. Sweet. Extremely naughty. No I’m not describing myself, thank you, but rather the cakey subjects of Sunday’s baking session. Saying that, my devotion to red wine for the past three days would suggest that the description is not far off, and rum-filled cupcakes are not really my idea of a detox. However, I have my excuses: a) red wine contains antioxidants. 2) the red wine consumption was mainly a-few-glasses-with-dinner kind of thing. d) Who cares, get those cakes in my chobblers.


I employed my usual fail-safe cupcake recipe but added lashings of Malibu and some desiccated coconut. To the icing I added - yep - more Malibu, and a touch of pink to liven them up. The outcome is a very pretty and seemingly innocent cupcake, but all preconceptions are quashed when the sweet caribbean flavour hits one’s tongue and warms the throat. And the cherry-on-top? Well I’ve gone for the literal…
